my mom brought some of these home pre-packaged from trader joe’s, and i’ve been snacking on them all day. check out how to make your own here (and feel free to substitute whatever kind of chocolate floats your boat)!
this morning i went downstairs to find this beautiful cake with a note left by my mother.
“does this qualify as a ‘…solution’?” she asks, knowing Polina and i run this blog.
praline apple cake with browned butter glaze? yes, mom…yes it does.
since the recipe is in a cookbook, not online, here’s the full recipe:
Praline Apple Cake
makes 1 9-inch layer cake
- 1/2 cup (1 stick) unsalted butter
- 1 cup granulated sugar
- 1/2 cup firmly packed dark brown sugar
- 2 eggs
- 2 cups all-purpose flour
- 2 tsp baking soda
- 2 tsp cinnamon
- 1 tsp nutmeg
- 1/2 tsp salt
- 4 cups cored, peeled, finely chopped apple
- 1 1/2 cups chopped, toasted pecans*
- browned butter glaze (recipe to follow this one)
Preheat oven to 350 F. Line bottoms of two 9-in round cake pans with baking parchment. Melt butter in medium saucepan. Remove from heat. Blend in sugars. Add eggs and beat until smooth. Combine flour, baking soda, spices, and salt in mixing bowl. Add butter mixture and blend well. Stir in apple and 1 cup pecans. Divide batter between two pans. Bake until top springs back when lightly touched, 40-45 minutes. Cool completely. Remove from pans and peel off parchment. Spread some glaze on top of one layer. Sprinkle with 1/4 cup pecans. Stack second layer on top and spread with remaining glaze, allowing some drizzle down sides. Top with remaining 1/4 cup pecans.
* NOTE: toast pecans in 375 F oven for 5-10 minutes, stirring 3 times while baking.
Browned Butter Glaze
- 1/3 cup unsalted butter
- 3 cups powdered sugar
- 2 tbs milk
- 2 tsp vanilla
Heat butter in medium saucepan over low heat until it turns golden amber; do not burn. Remove from heat and whisk in powdered sugar. Blend in milk and vanilla to form a smooth spreadable glaze.
